Pretty sure this is King Curtis. When Curtis produced Freddie King's best album (imo) Freddie King Is A Blues Master in '69, he had Freddie re-record it as Hot Tomato: https://www.youtube.com/watch?v=y8tVQEkaFfY. Hot Potato was released about 10 years later as Soultrain by The Ramrods.

When I was in college back in 2011, and had a radio show. I used to play this song as my intro song while I talked about the line up of the 3 hour show. This was my nod to “Soul Train.”

Check out Ramrods Soul Train. It's a clearer better of version of this.
Seeing as this track was composed and recorded in the early 1960s, I'm guessing this song was a precursor to funk AND disco... as well as, of course, Soul Train.
